Colonel Poole's internationally known Bar-B-Q restaurant is truly a modern day explosion - a prime example of "small business" in America.

Known around the world as the PIG HILL-OF-FAME, Oscar & Edna Poole began their business in a roadside shack in 1989 on Ga. Hwy. 515 in East Ellijay. GA., 75 miles north of Atlanta, with a borrowed capital of $3500.

The bottom right is how it looked when I personally first visited back in the early '90's.  It was a very-used old trailer, with a kitchen that the Health Dept. evidently never bothered to look into.  But the results were tasty, and I never had to visit an emergency room -- so I'm satisfied.

They have since moved from the "so tacky it's classic" shack into the "Taj-Ma-Hog" -- the name of the log cabin dining room that was built in the late 90's.

I've only had their pulled BBQ, never their Ribs or Chicken (why experiment when you have the opportunity for the best plate of pork in North Georgia?).  The beans are perfect, not overcooked and simmered long enough to absorb the savory sauce they're drenched in.  The Slaw is good, but definitely get the Brunswick Stew -- if you have to choose between the two.  Wash it all down with their (very) Sweet Tea, and you're absolutely set for the day.

That about accounts for what I've personally had on the menu, but future visits are already planned, so I'll report more later.  This is a tough job, but somebody has to do it!

By the way -- Colonel Poole is a full-fledged Kentucky Colonel, receiving his title from the Governor of Kentucky.  Colonel and Mrs. Poole (Oscar and Edna to everyone who know them) have four sons and seven grandchildren.  They make their home in East Ellijay, GA in a house that Oscar built himself.

And remember -- this is only a 4-day-a-week operation.  They're only open Thursday from 11 to 7, and Friday thru Sunday from 11 to 8.  Find the time to make the trip.  I'll buy it if you don't like it!
